Delicious Tex-Mex Enchilada's!






What you will need:

-Organic chicken
-Taco Seasoning (msg free)
-Black Beans
-Corn 
-Mild Chiles
-Shredded Zucchini
-Enchilada Sauce
-Any type of Shredded Cheese
-Tortillas

*Feel free to leave the cheese out.  I added it because we had a guest.






Cook the chicken in taco seasoning first.







In a large 13x9 pan coat the bottom with enchilada sauce.
Then layer the tortillas and top in layers of enchilada sauce, black beans, and zucchini.






Mix corn, chiles, and sliced chicken in a bowl.







Layer on top of the beans & zucchini.








Top with a few more tortillas and enchilada sauce and cook for 20 minutes on 420 degrees. (cover with alluminum foil)




Remove from oven, add cheese, and let bake for 5-10 more minutes.





Enjoy!!  Full of healthy ingredients and it's a new favorite around the Grice household.
